M-POWER YOUR IMMUNE SYSTEM


One of the most important things we can do to protect ourselves at this time from COVID-19 is building up our immune system so it can better combat illness or disease.   A healthy immune system is a result of many different things including a healthy diet focused on whole, mostly plant based foods, regular exercise, strong mental fortitude, and  plenty of sleep.

We have been spending a lot of time in the kitchen during quarantine cooking healthy, whole foods to nourish our body and protect it from illness and would love to share one of these recipes with you.

This is a recipe I stumbled upon years ago which has been a hit with everyone I have ever served it to.

WARM KALE SALAD

Ingredients:

1 head of Green Lacinto or Curly Kale, rinsed, destemmed and cut into small strips

1 Shallot, diced

1/4 Cup Olive Oil

3 Tablespoons Balsamic Vinegar

Sea Salt + Black Pepper to taste

Directions:

In a small sauce pan on low heat add the olive oil and shallots. Sautee shallots until they turn soft and transparent, then add balsamic vinegar. Stir until mixed well

Place kale in a microwave safe dish and steam for 2 minutes then drain.

In a medium sauce pan on low heat transfer the steamed kale and drizzle the warm dressing over the kale and mix well. Add sea salt + black pepper to taste.

Serves 2-4 people, recipe can be easily doubled.
